Best Buttermilk Pancakes

I was a lucky enough kid to have parents that made pancakes from scratch. I married someone that grew up with the stuff from a box. Boxed mix is good for a quicky breakfast, but when I’m craving REAL pancakes I prefer to get out all the goods and make them myself instead of just adding water. I have a feeling even my two year old can make a distinction between the two – daddy makes boxed pancakes, mumma makes real ones. This morning it was “NO! Mummy make the pancakes, not daddy’s pancakes – mumma’s pancakes!” Over the years I’ve tried various recipes and have only recently discovered the one that I will be sticking with forever. Buttery and sweet with vanilla coming through in every bite. They are not too thick, not too thin and have a soft flavourful texture, not chewy like some pancakes. I think the key to these pancakes is of course the rich buttermilk and melted butter instead of oil. Give them a go over the Holiday season? (sorry, not the best picture…)

Best Buttermilk Pancakes – makes 8 medium pancakes


1 1/4 cup white flour
2 tablespoon sugar
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt

1 1/2 cup buttermilk
1 large egg
2 teaspoons vanilla
3 1/2 tablespoons melted butter

In a medium sized bowl mix together dry ingredients with a whisk. Add all wet ingredients and lightly whisk till all dry and wet combined. There will be small lumps – do NOT try and make the batter smooth or you will have tough chewy pancakes. In a medium heat non-stick pan cook pancakes till slight bubbles form on top. Lightly lift the edge of one to see if the colour is to your liking. Flip and cook till you again have the desired colour. Due to the fact that these are fluffier pancakes, I’d let the colour be a tad darker so as to be sure it is cooked through. Slather with butter (use left over melted butter if you melted too much) and Canadian maple syrup OR vegan lemon curd that a friend made for me (the bite of lemon was awesome!). If you prefer your pancakes a tad thinner add 1/4 extra milk or buttermilk to the mix. Enjoy!
