Dalyn’s Best Blueberry Muffins

I rarely make anything sweet. It’s funny because I use to all of the time. At some point in my life my taste buds changed and became addicted to savory items. So now, when I do make something sweet, it is often something I can smother in butter. Like say… a muffin? My mother use to make some muffins that had brown sugar all over the top of them, melted in. They were gone within a day of her making them. I’ve tried many muffin recipes and have made this one out of a combination of many trails and errors. The orange extract is what really makes them along with blending some of the blueberries into the mix. My sister just ate two in a row so I must have done something right.

Dalyn’s Best Blueberry Muffins


1/2 cup butter softened
1 cup 2 tablespoons white sugar
2 medium or large eggs
1 teaspoon vanilla
1 teaspoon orange extract
1/2 cup milk
2 1/4 cups blueberries

2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup brown sugar (topping)

Whip butter with your hand held mixer for around a minute till light and fluffy. Add sugar and continue to blend. Add both eggs, then vanilla and orange extract (this is a key ingredient!). Mix dry ingredients together. Add half of the dry and half of the milk to the wet ingredients and blend till incorporated. Add the remaining dry and milk.

With your hands crush up 3/4 cup of the blueberries and add to mix, blending for a few seconds. (If using frozen berries, thaw them in hot/warm water and remove any of the weird stuff that floats to the top. Drain well before using).

With a spoon add the rest of the blueberries. Grease a muffin tin well and fill each slot with mix.

Top each muffin with around 1 tablespoon of brown sugar. Bake at 380 degrees F for 25 minutes. Let cool for 15 minutes and then remove the muffins from the tin for further cooling.

Store covered or in a container. Eat muffins slathered in butter at 3am in the morning when you can’t get back to sleep because your husband is snoring.

    Gawd, I love your writing…eat slathered in butter, my kind of girl!

    You know I love all the recipes you have posted and the time you take to post pictures and write in Dalyn humour. ONE day, I will make some of this food, (when I get my new kitchen aid mixer lol). A little joke between your mom & I.

    I just love blueberry muffins (even the boxed mixes). I AM going to make your recipe but please forgive me when I say I must modify it to lower the sugars due to having had a gastric bypass in January 2012. I eat an occasional blueberry muffin and just love the idea of the orange extract and crushed blueberries, cinnamon and nutmeg. I’ll come back to let you know how mine turned out whether good, bad or ugly.
