Chorizo Vegan Sausages

In my quest for healthier versions of meat, here’s another variation of vegan sausages! This is a slightly changed version of Isa Chandra Moskowitz’s recipe. Great to use in stir fry’s, chili, breakfast burritos? etc… after cooking slice them up and pan fry them in a little olive oil to get them crispy.

Ingredients:
1/4 cup mashed up pinto beans or refried beans
1 cup vegetarian chicken broth or veg broth (if you use bouillon don’t add salt below)
1 tbsp olive oil
2 tbsp soy sauce
2 tbsp tomato paste
2 tsp lemon zest
4 garlic cloves grated or pressed
1 1/4 cup vital wheat gluten
1/4 cup nutritional yeast
1 tsp salt
1 tbsp smoked paprika
1 tsp red pepper flakes
1 tsp dry sage (I minced up fresh sage)
1 tsp dry oregano
1/4 tsp cayenne (leave out if you can’t handle too much heat)

Mix all dry in large bowl. Mix all wet and add to dry, lightly mixing with a fork. Follow cooking instructions for my Italian vegan sausages, but steam these guys for 40 minutes.

    I’m on a mission to find a non wheat version of “vital wheat gluten”
