I have always loved beets. I grew up eating them. I think they are a very underused veggie and so so full of goodness!. Give this one a try!
Roasted Balsamic Beets
For two servings
1 large beet, peeled and sliced into 1/4 inch rounds
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
1 teaspoon (fresh if you have it) rosemary
2 cloves of chopped garlic
Mix all ingredients in bowl and place beets in. Mix and turn them around until they are covered with the marinade. Leve for at least 30 minutes, turning them ever 10 minutes.
Preheat over to 420 degrees F. Wrap in foil with remaining marinade and cook for 20 minutes or until desired tenderness.
You could also place on your grill for around 5 minutes after cooking to give them a more caramelized flavour.
